Grass-Fed Beef Stuffed Mini Peppers

🛒 Ingredients

  • 1 lb grass-fed ground beef
  • 12 organic mini bell peppers, halved and seeded
  • 1/2 cup organic raw cheddar cheese, shredded
  • 1/4 cup organic onion, diced
  • 2 cloves organic garlic, minced
  • 1 tsp organic chili powder (sugar-free)
  • 1 tsp organic paprika
  • 1 tbsp coconut oil
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

👩‍🍳 Instructions

  1. 🔥 Preheat oven to 375°F (190°C).
  2. 🧈 Heat coconut oil in a pan over medium heat. Add onion and garlic, sauté until softened.
  3. 🥩 Add ground beef to the pan, breaking it apart while cooking. Stir in chili powder, paprika, salt, and pepper. Cook until beef is browned.
  4. 🧀 Remove from heat and mix in shredded cheddar cheese.
  5. 🌶️ Stuff each mini bell pepper half with the beef mixture.
  6. ⏲️ Place stuffed peppers on a baking sheet and bake for 15 minutes, until peppers are slightly soft and cheese is melted.
