π Ingredients
- 2 organic zucchini, sliced lengthwise into thin strips
- 1 cup organic raw mozzarella, shredded
- 1/2 cup organic ricotta cheese
- 1 clove garlic, minced
- 1 tbsp fresh organic basil, chopped
- 1 tbsp organic olive oil
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 cup organic tomato sauce (sugar-free)

- π₯ Preheat oven to 375Β°F (190Β°C).
- π₯ In a bowl, mix together ricotta cheese, mozzarella, garlic, basil, salt, and pepper.
- π Lay out zucchini strips and place a spoonful of the cheese mixture at one end of each strip.
- π Roll up the zucchini strips and place them seam-side down in a baking dish.
- π Pour tomato sauce over the zucchini roll-ups.
- π§ Drizzle with olive oil and bake for 15β20 minutes, until the zucchini is tender and the cheese is melted.
