Beef Stock

Makes: 8 cups

Total Time: 6–8 hr (slow simmer)

Ingredients:

  • 🥩 3 lbs beef bones (marrow and knuckle)
  • 🥕 2 carrots, chopped
  • 🌿 2 celery stalks, chopped
  • 🧄 2 cloves garlic, smashed
  • 🌿 2 bay leaves
  • 🧂 1 tsp sea salt
  • 💧 10 cups filtered water
  • 🌿 Optional: 1 tsp black peppercorns

Step-by-Step Process:

  1. Preheat oven to 400°F and roast bones 30 min for richer flavor.
  2. Transfer bones to a large stockpot and add vegetables, garlic, herbs, salt, and water.
  3. Bring to a gentle simmer, skimming foam as needed.
  4. Simmer 6–8 hours on low heat for maximum nutrient extraction.
  5. Strain through a fine-mesh sieve into a clean container.
  6. Cool, refrigerate up to 5 days, or freeze up to 6 months.
