Ingredients

  • 1 lb organic, pasture-raised chicken thighs (cubed)
  • 1 tbsp organic ghee (clarified butter)
  • 1 organic onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp organic ginger (minced)
  • 2 tbsp organic curry powder (sugar-free)
  • 1 cup organic coconut milk (unsweetened)
  • 1/2 cup organic tomato sauce (sugar-free)
  • 1 tbsp organic cilantro (chopped)

Instructions

Step by Step Process

  • Heat ghee in a large skillet over medium heat. Add onion, garlic, and ginger, sauté until softened.
  • Add chicken and curry powder. Cook for 5-7 minutes, until chicken is browned.
  • Stir in coconut milk and tomato sauce, simmer for 15-20 minutes until sauce thickens and chicken is fully cooked.
  • Garnish with cilantro and serve.
