Cauliflower Rice Burrito Bowl

Ingredients

  • 1 cup cauliflower rice (homemade or store-bought)
  • 1/2 cup organic black beans (cooked)
  • 1/2 cup diced organic tomatoes
  • 1/2 cup raw cheddar cheese (shredded)
  • 1/4 cup organic guacamole
  • 1 tbsp fresh cilantro (chopped)
  • 1 tbsp organic sour cream (made with raw cream)
  • 1/2 tsp cumin powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

Step by Step Process

  • Heat the cauliflower rice in a pan over medium heat, adding cumin and paprika.
  • Once heated, place the cauliflower rice in a bowl.
  • Add black beans, diced tomatoes, raw cheddar cheese, and guacamole on top of the rice.
  • Drizzle with organic sour cream and sprinkle fresh cilantro.
  • Season with salt and pepper to taste.
  • Serve immediately.
