Cauliflower Risotto

Ingredients

  • 1 head organic cauliflower (riced)
  • 1/4 cup raw organic Parmesan cheese (grated)
  • 1/4 cup organic heavy cream (raw if possible)
  • 1 clove organic garlic (minced)
  • 1 tbsp organic olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Fresh basil (chopped, for garnish)

Instructions

Step by Step Process

  • Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
  • Add riced cauliflower, and cook for 5-7 minutes until tender.
  • Stir in heavy cream, Parmesan, salt, and pepper. Cook for another 2 minutes.
  • Garnish with fresh basil and serve.
