Coconut Curry Veggie Stir Fry

Ingredients

  • 1 cup organic broccoli florets
  • 1/2 cup organic bell peppers (sliced)
  • 1/2 cup organic carrots (sliced)
  • 1/4 cup coconut cream (organic)
  • 1/2 cup organic tofu (cubed)
  • 1 tbsp coconut oil
  • 1 tbsp tamari (gluten-free soy sauce)
  • 1 tbsp organic curry paste (sugar-free)
  • 1/2 tsp turmeric
  • 1 tbsp fresh basil leaves (chopped)

Instructions

Step by Step Process

  • Heat coconut oil in a pan over medium heat.
  • Add tofu and sauté until lightly golden. Remove and set aside.
  • In the same pan, add broccoli, bell peppers, and carrots. Stir fry for 5 minutes.
  • Add tamari, coconut cream, and curry paste. Stir to combine.
  • Add sautéed tofu back into the pan.
  • Sprinkle turmeric and fresh basil on top.
  • Cook for another 2 minutes, then serve immediately.
