- 1 cup organic broccoli florets
- 1/2 cup organic bell peppers (sliced)
- 1/2 cup organic carrots (sliced)
- 1/4 cup coconut cream (organic)
- 1/2 cup organic tofu (cubed)
- 1 tbsp coconut oil
- 1 tbsp tamari (gluten-free soy sauce)
- 1 tbsp organic curry paste (sugar-free)
- 1/2 tsp turmeric
- 1 tbsp fresh basil leaves (chopped)
Instructions
Step by Step Process
- Heat coconut oil in a pan over medium heat.
- Add tofu and sauté until lightly golden. Remove and set aside.
- In the same pan, add broccoli, bell peppers, and carrots. Stir fry for 5 minutes.
- Add tamari, coconut cream, and curry paste. Stir to combine.
- Add sautéed tofu back into the pan.
- Sprinkle turmeric and fresh basil on top.
- Cook for another 2 minutes, then serve immediately.
