- 1 lb grass-fed lamb (cubed)

- 1 cup organic coconut milk (unsweetened)
- 1/2 cup organic diced tomatoes
- 1 tbsp organic cilantro (chopped)
Instructions
Step by Step Process
- Heat coconut oil in a pot over medium heat. Add onion, garlic, and ginger. Cook until softened.
- Add lamb, curry powder, and turmeric, and cook for 5 minutes until lamb is browned.
- Stir in coconut milk and diced tomatoes. Cover and simmer for 25-30 minutes, until lamb is tender.
- Garnish with fresh cilantro and serve.
