Ingredients

  • 1 lb grass-fed lamb (cubed)

  • 2 tbsp organic curry powder (sugar-free)
  • 1 tsp turmeric
  • 1 cup organic coconut milk (unsweetened)
  • 1/2 cup organic diced tomatoes
  • 1 tbsp organic cilantro (chopped)

Instructions

Step by Step Process

  • Heat coconut oil in a pot over medium heat. Add onion, garlic, and ginger. Cook until softened.
  • Add lamb, curry powder, and turmeric, and cook for 5 minutes until lamb is browned.
  • Stir in coconut milk and diced tomatoes. Cover and simmer for 25-30 minutes, until lamb is tender.
  • Garnish with fresh cilantro and serve.
