Ingredients

  • 1 medium spaghetti squash
  • 1 cup organic tomato sauce (sugar-free)
  • 1/2 cup raw parmesan cheese (shredded)
  • 1 tbsp olive oil
  • 1 tbsp fresh basil (chopped)
  • Salt and pepper to taste

Instructions

Step by Step Process

  • Preheat the oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Drizzle olive oil over the squash and place face down on a baking sheet.
  • Roast in the oven for 30-40 minutes until tender.
  • Once cooked, use a fork to scrape the squash into spaghetti-like strands.
  • In a pan, heat the tomato sauce and pour over the squash.
  • Top with raw parmesan and fresh basil.
  • Season with salt and pepper, then serve immediately.
