Turkey Lettuce Cups

Ingredients

  • 1 lb grass-fed ground turkey
  • 1 tbsp organic coconut oil
  • 1 tbsp organic curry powder (sugar-free)
  • 1 tsp ground turmeric
  • 1/2 tsp cumin
  • 1/2 cup organic red bell pepper (diced)
  • 1/4 cup organic red onion (diced)
  • 1 tbsp organic cilantro (chopped)
  • 1 head organic butter lettuce (leaves separated)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

Step by Step Process

  • Heat coconut oil in a skillet over medium heat. Add onion and bell pepper, sauté until softened.
  • Add ground turkey to the skillet, breaking it apart as it cooks.
  • Stir in curry powder, turmeric, cumin, salt, and pepper, and cook until turkey is browned.
  • Remove from heat and mix in chopped cilantro.
  • Spoon the turkey mixture into butter lettuce leaves and serve.
