Ingredients

  • 2 large zucchinis (sliced lengthwise into thin strips)
  • 1 cup organic black beans
  • 1/2 cup organic salsa (sugar-free)
  • 1/2 cup raw cheddar cheese (shredded)
  • 1 tbsp cumin powder
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

Step by Step Process

  • Preheat oven to 375°F (190°C).
  • Lay zucchini slices on a baking dish and stuff with black beans mixed with cumin.
  • Roll zucchini slices and top with salsa and raw cheddar cheese.
  • Bake for 15 minutes until cheese is melted.
  • Garnish with fresh cilantro and serve.
