Ingredients

  • 1/2 cup shredded purple cabbage
  • 1 carrot, shredded
  • 1 zucchini, diced
  • 1 tbsp tamari (gluten-free soy sauce)
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 8 large lettuce leaves (butter lettuce or romaine)

Instructions

Step by Step Process

  • Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 6-7 minutes.
  • Add garlic powder, ginger, and tamari. Stir well to combine.
  • Add the bell peppers, cabbage, carrot, and zucchini. Cook for an additional 5 minutes until vegetables are tender.
  • Spoon the turkey and vegetable mixture into lettuce leaves and serve as wraps.
