Ingredients

  • 2 organic chicken breasts (cooked and shredded)
  • 4 large lettuce leaves
  • 1/2 cup coconut cream
  • 1 tbsp red curry paste
  • 1 tsp lime juice
  • 1 tbsp coconut oil
  • 1/4 cup organic bell peppers (sliced)
  • 1 tsp fresh ginger (grated)
  • Salt to taste

Instructions

Step by Step Process

  • Heat coconut oil in a pan and sauté bell peppers and ginger for 3 minutes.
  • Add coconut cream, red curry paste, and lime juice. Stir to combine.
  • Add shredded chicken and cook for another 5 minutes.
  • Spoon the mixture into large lettuce leaves and wrap.
  • Serve immediately.
