Ingredients

  • 1 medium eggplant (sliced)
  • 1/2 cup raw parmesan cheese (grated)

  • 2 tbsp ghee
  • 1 tbsp fresh basil (chopped)
  • Salt and pepper to taste

Instructions

Step by Step Process

  • Preheat the oven to 375Β°F (190Β°C).
  • Coat eggplant slices in almond flour and pan fry in ghee until golden.
  • Place fried eggplant in a baking dish.
  • Layer with tomato sauce and top with raw parmesan cheese.
  • Bake for 15 minutes until cheese is melted and bubbly.
  • Garnish with fresh basil and serve.
