Instructions
Step by Step Process
- Preheat the oven to 375Β°F (190Β°C).
- Coat eggplant slices in almond flour and pan fry in ghee until golden.
- Place fried eggplant in a baking dish.
- Layer with tomato sauce and top with raw parmesan cheese.
- Bake for 15 minutes until cheese is melted and bubbly.
- Garnish with fresh basil and serve.
